Aanapakaya Halwa / Bottle gourd Halwa

Ingredients:

  • Bottles gourds 2 (any size)
  • Sugar
  • Water
  • Ghee 1 scoop
  • Some melon seeds

Method:

  • Peel the  Anapakaya / Bottle gourd, Shreded  both of them and let it keep aside at least 15 mins.
  • Squeeze out the water from Bottle Gourd (DO NOT THROW THE BOTTLE GOURD WATER).
  • In a wide pan,  fry it for 10 mins on a high flame.

  • Now, add 1 1/2- 2 scoops of ghee, fry it on MEDIUM Low flame.
  • Keep on fry it until the bottle gourd gets completely dry.
  • It may take around 25-30 mins.

  • Now add the melon seeds / sunflower seeds.
  • Switch off the stove.
  •  Now, MEASURE the FRIED BOTTLE GOURD.
  • Take same Quantity of Sugar.
  • Water 3/4 cup.
  • Finally
    • Fried Bottle gourd 1 cup
    • Sugar 1 cup
    • Water 3/4 cup

For Sugar Syrup:

  • In a pan, add sugar and water and let it boil.

  • Allow to boil till gets “ONE STRING ” consistency. It may take above 10, 15 mins.

  • Now add, FRIED Bottle gourd into sugar syrup.
  • Mix it well properly and let it cook for 2-3 mins. Keep on stirring it.
  • Switch off the stove.

  • Enjoy the hot Halwa.

Notes:

  • If you don’t fry till gets dry texture,
    • The halwa will not stay long time.
    • You feel smells Rawness on the sweet.
    • If you fry properly, it will stay  15- 20 days.
