Malai Kofta Curry

Ingredients:

  • For Koftas:
    • Chopped onion 1/2 medium
    • Boiled Potato 1 medium
    • Grated Carrot 1/2 cup
    • Grated paneer 1/4 cup
    • Mint leaves few
    • Cilantro few
    • Green chili paste 1/4 tsp
    • Salt
    • Kasoori methi leaves 1/4 tsp
    • Coriander Powder 1/4 tsp
    • Cumin seeds 1/4 tsp
    • Garam Masala 1/4 tsp
    • Dry corn flour / maida / sooji rawa / oats powder for  dipping

Method:

  • In a pan, after heat up the oil, add chopped onions, fry it for 5 mins only, (not fry until brown color).
  • Switch off the stove. Let it cool for  a while.

 

  • In a plate / vessel, add boiled grated potato, grated carrots, paneer,  mint leaves, cilantro leaves, Green chili paste, Salt, Kasoori methi leaves, Coriander Powder, Garam Masala,  mix it properly and make a dough.
  • Take a  small size of dough and make it round shape (you can do Oval shape also)
  • Dip it any Dry flour. I used oat + Sujji powder.
  • Keep it aside.
  • Deep fry koftas in oil and keep it aside.

Ingredients For Gavy:

  • Onion 1 medium size
  • Tomato 1 large size
  • Green chili 1
  • Ginger garlic paste 1/4 tsp
  • Turmeric 1/4 tsp
  • Red Chili powder 1/2 tsp
  • Kassori methi leaves 1/4 tsp
  • Garam masala 1/4 tsp
  • Clove 2
  • Cinnamon sticks  small 2
  •  Salt
  • Oil 4 tsp
  • Cashew nuts 5-8
  • Almonds 5-8
  • Pistachio 5
  • Poppy seeds 1/2 tsp
  • Cream/ milk/ malai  1/2 tsp

 

Procedure for Gravy:

 

  • Soak all nuts with warm water for 15 mins.

 

 

  • Heat a pan with oil, add clove, cinnamon stick, chopped onions, Let it fry until raw smell goes away.
  • Add  Green chili, ginger garlic paste, mix it, fry for a minute.
  • Add chopped tomato along with red chili powder, Kasoori methi leaves, garam masala, turmeric powder salt. Mix it well.
  • Let it cook with lid, until tomato gets soft.
  • Switch off the stove, let it cool.
  • Make a paste tomato mixture. Do not add a water while grinding.

  • In a same pan / another pan, add 1 tsp oil, this tomato mixture puree into a pan, let it cook for a 3 mins.
  • In a mean while, make a  paste of soaked nuts (cashew, almonds, pista, poppy seeds) along with some water.
  • Add Nuts paste into tomato mixture into a pan.
  • Add 1 cup of water and let it cook until get the proper gravy consistency.

  • Switch off the stove. Add koftas, cream/ malai into a gravy.

  • Garnish with malai on top of it.
  • Enjoy with Naan / Roti / any flavored rice items.
