Veg Handi

Ingredients:

  • Veggies
    • Carrot 1 medium
    • Gobi / Cauliflower 1/2 cup
    • Capsicum / green bell pepper 1/2 cup
    • Potato 1 medium size
    • Green peas 1/4 cup
    • Beans few
  • For Gravy:
    • Onion 1 medium size
    • Tomato 1 large or 2 medium size
    • Cashew nuts 7-8
    • Oil 1 1/2 tsp
  • Whole Garam masala
    • Cloves 3,4
    • Cinnamon stick 1 inch
    • Bay leaf 1
  • Coriander Powder / Dhaniya Powder 1/4 tsp
  • Cumin Powder/ Jeera Powder 1/4 tsp
  • Garam Masala 1/4 tsp
  • Ginger garlic paste 14 tsp
  • Kasuri Methi crushed 1/4 tsp
  • Red chili Powder 1/2 tsp
  • Salt as per taste
  • Yogurt 1/2 cup
  • Water 11/2-2 cups
  • Cream / Malai (optional)
  • Oil 3 tbs

Method:

  • In a pan, add oil, add onions and let it fry 5 mins.
  • Add ginger garlic paste and tomatoes, let it cook for 5 mins.
  • Switch off the stove.
  • After, cool down the mixture completely and transfer to the blender.
  • Blend to smooth paste without adding water and keep aside.
  • In the same pan, heat oil and add bay leaf, cinnamon stick and cloves.
  • Add chili powder and turmeric. Saute on low flame for 20 sec without burning the spices.
  • Pour the prepared onion-tomato paste, coriander powder, jeera powder and garam masala.
  • Saute well for 5 mins.
  •  Add curd keeping the flame on low to avoid curd from curdling.
  • Now, add mixed veggies and add 1 1/2 -2 cups of water, salt, mix well and cover and cook the vegetables for 15 mins or till they are cooked properly.
  • Add crushed kasuri methi and mix it well.

  • Serve with roti, naan and any flavored rice.
