Mint Quinoa Pulao

Ingredients:

  • Quinoa 1/2 cup
  • Mints leaves 1/2 cup
  • Coconut milk 1/2 cup
  • Soya chunks 1/4 cup soaked
  • Onion slices 1/4 cup
  • Green chilies 1 or 2
  • Spices
    • Cumin seeds 1 tsp
    • Cinnamon stick 1/2″ -1
    • Bay leaf 1
    • Salt
  • Butter 1 tbsp
  • Oil 1/1 tbsp

Method:

  • Soak quinoa for 15, 20 mins.

  • In a pan add oil and butter..

  • Add cinnamon stick, bay leaf and cumin seeds.

  • Add onion slices along with little salt, mix it then cook for 5 mins.

  • Wash mint leaves and make a paste along with green chilies.
  • then add mint paste.

  • Add soaked soya chunks.

  • Add  quinoa which is soaked, salt and combine well.

  • Add coconut milk 1/2 cup and water 1 cup water. Cook the quinoa until gets soft and smooth.
  • It may take around 20 mins.

  • Almost ready.
  • switch off the stove. keep the lid on pan. DO not disturb for 5 mins.
