Spring Dosa/Veggie Stuffed Dosa

Ingredients:

  • Dosa batter
  • For stuffing 1:
    • Carrot shredded
    • Cabbage shredded
    • Onions sliced
    • Beans
    • Spinach

  • For Stuffing 2: Potato Masala
    • Boiled potoato
    • sliced onions
    • green chili paste
    • Ginger garlic paste
    • Takda:
      • Oil
      • Channa dal 1 tsp
      • Urid dal 1 tsp
      • Mustard seeds 1/2tsp
      • Cumin seeds 1/2 tsp
      • Turmeric 1/4 tsp
      • Curry leaves

Preparation:

  • Stuffing 1:

  • In a pan, add oil, add onions, beans and shredded cabbage , then stir fry for a min..

  • Add shredded carrot..

  • Add spinach, then stir fry on a medium high flame for couple of mins.

 

For Stuffing 2:

  • In another pan, add oil, do tadka

  • Add sliced onions fry for 2, 3 mins then add green chili paste, ginger garlic paste and salt..

  • Then, add boiled  smashed potatoes and mix well then cook for 4, 5 mins,
  • Switch off the stove.
  • Finally add cilantro.

  • Both stuffings are ready.

  • Make a dosa..

  • Sprinkle any idly karam powder or any other species like curry leaves powder..

  • Keep the potato masala on top of the dosa

  • Keep the Veggies on top of potato masala

  • Start roll from top to bottom.

  • Rolled up, ready to serve

  • Serve with coconut and ginger chutney.
