Akki Roti with leftover Quinoa

Ingredients:

  • Quinoa -cooked leftover / fresh  1/2 cup
  • Brown Rice flour / white rice flour 3, 4 TBSP
  • Red chilli powder 1/2 tsp
  • Salt
  • Cumin seeds 1/2 tsp
  • Veggies 3, 4 TBSPS
    • Shredded carrot
    • Chopped onions
    • Chopped Spinach
    • Chopped Cilantro

 

Process:

  • In a mixi jar take cooked quinoa

  • Add 2 TBSP water

  • Make it paste ( not liquidy )
  • Keep aside

  • In a wide plate / vessel add brown/ white  rice flour

  • Continuously, Add chopped spinach

  • Add chopped onions

  • Add shredded carrot

  • Add cilantro

  • Add red chili powder and salt

  • Combine well

  • Add quinoa paste

  • Make a dough

  • Take a pothin cover or ziplock
  • spread some oil

  • Take orange size of dough and place it on the cover

  • Close it with another cover

  • Very gently roll it with a roller

  • Make a small hole with finger  in the middle of the roti

  • Place it on a lightly greased  pan

  • Keep the lid on for few seconds then remove it

  • Add little ghee/butter/oil around the roti

  • fry it both sides

  • Serve with plain yogurt / pickle
  • Enjoy!!

 

Note:

  • If the dough is too soft add brown / white rice flour
  • Instead of quinoa use brown/ white rice or any millets.
